Chicken Noodle Soup

Ingredients:
A. The Broth:
1 free range chicken (preferred)
and about 5 lbs chicken bones
2 yellow onions, roasted until fragrant
1 or 2 ginger root of thumb size, roasted
2 pieces of rock sugar (thumb size)
1 tablespoon of fish sauce ( optional)
Salt (to taste)
Spices (pho flavor): you either can buy spices in a package “ Pho Hoa” or “ Vyvy” at 99 Ranch market.
Pho noodles (dried flat rice sticks)
B. Garnish:
sweet basil (Thai basil)
ngò gai (saw tooth herb)
lemon or lime
jalepeno chilli
hoisin sauce (brownish), chilli sauce (red)
green onion, cilandro
1 white onion ( sliced)
Black pepper (freshly ground)
Preparation:
Clean chicken bones and the chicken with table salt and rinse well with cold water.
Put chicken and chicken bones, roasted ginger, roasted onion, salt, rock sugar in a big pot, fill with water; bring to boil then reduce to Medium heat. ( about half an hour); remove all impurities on top of the pot
When the chicken is cooked, take the chicken out, rinse with cold water and keep it in a cool place. When it is cool, you can either slice it or tear it into strips.
Continue to boil the broth for about another 2 hours.
Add the package of pho flavor
Strain the broth for better clarity;
taste it and correct it with salt, rock sugar, until they are good to your liking
Take another pot to boil water for the reconstitution of dried rice sticks into more tender form. Do not over boil the rice noodles, as they will continue to cook in the hot broth, while eating.
How to eat:
Put the cooked noodles into a bowl, top with chicken, diced green onion, cilantro, sliced white onion, chilli ( if preferred).
Fill the bowl with plenty of the broth.
Pho is eaten with bean sprouts and other herbs as the garnish.
